One of the classic strains from the newer Northwest craft breweries, this one produces a malty and mildly fruity ale with depth and complexity. Flocculation: high, attenuation: 67-71%. Ideal fermentation temperature: 65°- 75° F.

Great for IPA/pale ale styles
I have experimented with 3 or 4 different kinds of yeast from Williams for the well-hopped ales that I like, and settled on this one for the last 10 brews or so. This provides the best flavor for the brewing style, and is rather forgiving of my less-than-perfect control of fermentation temperature. I have had little problem with premature activation of the paks during delivery, and all have performed well within a few hours of activation.

Great flavor from yeast with little of flavors even at the higher end of the temperature spectrum.
Perfect for big IPAs and APAs.
Pros: Taste like you want it too. Nice and fruity. Acted very quickly, bubbling within an hour and kept on going. Made a very clean beer.
Cons: none i can think of.
northwest yeast
Pros: spectacular yeast strain. makes fantastic pale ales and IPA's!
Cons: only comes in the XL size, but worth a couple extra $$
