William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 5 gallons of full-bodied varietal wine.

The 192 ounces of concentrate included in each pack is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Our California Wine Concentrates are also acid balanced, so you do not need to add acid or do an acid titration test (unless you want to).

Riesling is a grape that has adapted well to California, and tends to produce a floral, fruity white wine. Like Chardonnay, adding a little oak to this one during the ferment can provide a welcome hint of oak.

Excellent Riesling

Pros: Excellent "earthy" flavor with notes of apricot and a slight spice. The aroma is very floral with hints of tropical fruit. Nice straw color. I would compare it to a $20-30 bottle of California Riesling.

We made this late in 2011. Absolutely beautiful Riesling. Tropical fruit nose and a apricot, mango, pineapple taste with a soft spicey overtone. This wine is still young but so far one of the best California Rieslings I have tasted. High quality juice.

I agree with the previous reviews. although i just bottled at about 5 months old, this is a really nice wine. finished bone dry, not too much fruit - and agree on the earthy and spicy flavors. i'm thinking this will age out real nice.

Q: I recently ordered a Riesling kit and made a wonderful wine. My question is what type of Riesling was it. is Grey Riesling, Johannesburg Riesling, or some other type?

A: Our Riesling is not grey or Johannesburg, it is just plain Riesling, from Woodbridge in California.
