William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 5 gallons of full-bodied varietal wine.

The 192 ounces of concentrate included in each pack is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Our California Wine Concentrates are also acid balanced, so you do not need to add acid or do an acid titration test (unless you want to).

Muscat is the world's oldest documented grape variety, with roots to 13th century Greece and parts of the Mediterrnean. Produces a white wine with a slightly sweet, floral charcacter. Ideal for sipping on a hot day or as a dessert wine. The Muscat grapes used in our concentrate are from Solano County in California.

I was glad that this concentrate was available. It is much better then the alternatives, and the shipping is very professional. I will continue to pick this william's product as long as it is available.

Excellent floral aromas

The concentrate had excellent floral aromas and sweet, spicy flavors. I used Cotes du Blanc yeast to ferment it dry and then added just a touch of sweetness. Turned out awesome.

Muscat Concentrate

Pros: Very easy to mix. At 1 year, I am very pleased with this wine. We did sweeten it to 1.008 before bottling.

Cons: Directions for new people may not be very good. Must be patient, but worth the wait.

Q: Hi, I’m planning to use this juice concentrate to make muscat champagne vinaigrette as a dressing for salads. How long can this concentrate last open in the bridge? Is it packaged in a way where once opened then the whole thing is opened? Thank you !

A: It is packed in a flexible pouch with a resealable cap so you can use part of it and then reseal and store the rest. If kept refrigerated, the concentrate will last for at least 6 months providing it is resealed with the cap.

Q: Is this Muscat blanc grapes???

A: Yes, Muscat is the varietal and the blanc simply means white and our Muscat kit produces a white wine.
