A dry fermenting, top cropping yeast which produces a dry, slightly tart, crisp beer, in American hefeweizen style. Flocculation low, attenuation: 74-78%. Ideal temperature: 58-74° F.

Q: Does this yeast have the typical "banana" notes? I am looking for a wheat beer ale yeast with a clean finish and high flocculation?

A: This does not have the banana notes. Those are more common in the Bavarian Wheat strains. This has low flocculation as do most wheat yeasts. Wyeast 3056 (our number Y57), is a Bavarian Wheat Blend, this has a medium flocculation and mild banana notes since it is blended with a neutral ale strain.
