This is a hefeweizen yeast that can produce a wheat beer with a complex flavor and aroma. Balance of banana and bubble gum esters with apple/plum notes and cloviness. Flocculation: low, attenuation: 70-76%. Fermentation temperature range: 64-75° F.

Pros: A healthy robust yeast that ferments vigorously and attenuates nicely. It produces an authentic Bavarian wheat beer flavor of banana with hints of clove, without finishing sweet or interfering with hop subtlety. This yeast works especially well making braggot (honey ale), and produces an authentic Bier de Miel.
