Short wait for fetmentation
Beer was bubbling within 12 hours. I have used this yeast several times and really like the flavor profile.
I can't fault the yeast
I make lagers under pressure. The flavor profiles really don't develop under this treatment. For many styles, the flavorless profiles are a benefit. I used M76 and it had a tart flavor. I was worried that I had contaminated the batch with lacto. I intentionally omitted the acid malt that I had hoped to bring down the Ph. I added a bit of darker malt to help. I am not a fan of the sour or tart beers, this should have been a dry lager. I wasn't going to dump it, I would just drink it and learn. As the batch aged, it fell into a very drinkable beer that I had designed. Of course, that is what it is supposed to do. My handling was expecting it to be more like my two standard yeasts (Whitelabs High Pressure, and Cry Havoc). I wholeheartedly suggest this for heavier bodied beers and give it the true lagering that it deserves. (not the 1 week that is my custom)...
Mangrove Jacks Bavarian Lager
This is the 5th MJ yeast I’ve tried. Like all the rest, it takes off quick and ferments very well. I was impressed how hard this yeast worked. Never seen that in a lager.
Truly awesome yeast!
Easy to use with consistently excellent results! Lots of people like the beer produced by Mangrove Jack's yeast. I take the accolades but the yeast gets the credit for all the hard work. I've tried several different brands of dry yeast but Mangrove Jack's has the best flavors yet. Made a black lager that was a huge hit with my friends. Can't wait to break out the rye lager that's conditioning right now.
