Do you make clear spirits like vodka, gin, or just plain old moonshine? Do you like the smoothest possible drink? If you filter through charcoal after distillation, you will clean up the flavor and make the spirit mellower with less off flavors. This also applies to whiskey, and certain whiskey distilleries religiously filter with carbon after a run before oak aging. Filtering is not for everyone, as charcoal filtering also removes flavors from the wash like corn, wheat, barley, molasses, or even potatos if you make vodka.
