Powerful esters
I used to brew a lot of wheat beers in the past using Edme ale yeast. After many years of not brewing wheat beer, I decided to brew a batch using this yeast. The clove/banana esters are very enhanced by this yeast as compared to regular ale yeast.
Bubble gum!
A very strong fermentor. I chose to ferment my dampfbier at room temperature which kicked off a bunch of what I would describe as bubble gum flavored esters. I will try a proper weissbier soon with the recaptured slurry.
Great flavors
I have never used this before and thought I'd try since the one I usually use was out of stock. I fermented at a little higher temp than usual (73 degrees) to see if I could bring out more banana esthers. It worked. I just tried my first one today and was very pleased with the citrus and banana notes. I think this is going to become my new go to hefeweizen yeast.
