William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat (never exceeding 180 degrees F.) under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 3 gallons of full-bodied varietal wine.

The 116 ounces of concentrate included in each pack is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Our California Wine Concentrates are also acid balanced, so you do not need to add acid or do an acid titration test (unless you want to).

Merlot is a full-flavored red grape, perhaps the most popular of red wine grapes. A bit less tannin and boldness than Cabernet.

Good Concentrate

I previously made wine from this concentrate. Now I mainly use it to increase the brix on fruit from my backyard vineyard, in which I occasionally have trouble getting the fruit ripe. Good stuff.

Q: How does this create alcohol if you don't add sugar before fermentation? Do you have instructions how to make wine from your # G90 product?

A: There is plenty of fermentable sugar in the grape juice, so there is no need to add any additional sugar to the hydrated grape juice concentrate.
