William's Honey Cream Ale started out as a mild ale made with Briess Pilsnen dry malt. The hop flavor is on the mild side, with just enough to balance the delicate pale malt flavors. The addition of our unpasteurized California honey (at the end of the boil to preserve aroma) is what gives this beer an added depth of flavor and complexity, the honey increasing the body, sweetness, and complexity without overwhelming the delicate hop crispness or darkening the color. Alcohol: 5.5%, IBU's 26.
Includes 7 pounds of dry malt extract and orange blossom honey, selected aromatic hops, and corn sugar for carbonation. Needed yeast not included, order separately above. Makes 5 gallons with a starting gravity of approximately 1.055. Ease of Brewing: Beginner.
Yeast recommendations:
1. On this one, we find Wyeast 1187 Ringwood Ale Liquid Yeast to produce the smoothest flavor
2. For a dry yeast option that produces a very balanced beer, we recommend Safale S-23 Dry Yeast

My favorite kit
I absolutely love this kit. I add 1 lb each of flaked corn and carapils malt, then add about 1oz of finely chopped ginger in after the heat is off (when I add honey). It is a great refreshing beer for those hot summer days. I have made this 4 or 5 times.
Delicious
I'm normally a dark beer drinker / brewer. This Honey Cream Ale was light and rich. The honey flavor is incredible without being sweet. Summer guests are enjoying it. I will do another batch next summer.
Review
The Wyeast never filled out. I broke the inside as directed, but it never got full. I ended up using dry bread yeast. We’ll see how that turns out. Should be OK.

Honey Cream Ale
I brewed this beer for my son's wedding last fall. It was so crisp and refreshing, just perfect for our "Indian summer". This beer is perfect for adding flavoring, or just sitting on the beach and drinking a bottle. I have bought this beer since and will probably buy again in the future.
