A high temperature tolerant enzyme which breaks down starch into dextrins and fermentable sugars. It is best used during the mash when using raw grains, potatos, or cracked corn, to help convert the starches to sugars for later fermentation. In other words, great for Vodka or Bourbon mashes where you are using mostly corn or potatos. Not needed for mashes rich in enzymes, like those with a majority of malted barley in their grain bill.
