This is a species of Lachancea which products moderate amounts of lactic acid in addition to alcohol, so it can be used as both a yeast and a sour producing agent. Ideal for Berliner Weiss, Gose, American Lambic, American Wild Ales, and Sour IPA's. Ideal temperature range 68 to 77 degrees F.
