Making your own wine is satisfying and easy.  As long as you ferment great juice, keep everything sanitary, and give it enough time to age (3 months or more for whites, 6 months or more for reds), you will get great wine.

Here at William’s, we have developed our William’s California Wine Kits with this philosophy in mind. Our Kits include 192 ounces of pure California varietal grape concentrate, condensed at temperatures that never exceed 180 degrees F. from Central Valley wine grapes picked at their ripe peak in the late Summer and early Fall. To complement the varietal juice, specially selected dry wine yeast, oak chips, and nutrient are also included as needed. Unlike many wine kits featuring added sugar, this 192 ounces of pure concentrate is all that is needed (except for the yeast and addtives) to produce 5 gallons (24 bottles) of varietal wine.

So far so good
Twenty days in primary SG 1.001. Still bubbling along though considerably slower. Took a taste at 19 days a bit sweet. 
Good kit, simple instructions good value.

Red Zinfandel Kit
I ordered a 2.5 gallon kit about 2 yrs. ago to see if I liked it or not. Well, it was good after I bottled it, But, now that it has aged for about  two years, It is superb. Never thought it would be so good. I would recommend this kit to any one that likes red wine. It is "Excellent" in my opinion. Just let it age for at least one year. More is better, if you can wait. I have since ordered a five gallon kit that is in the primary now. This kit comes with very easy to understand instructions, even for a first timer !!!

It is a swell Zinfandel
Like all of the other Williams Brewing Wine kits I have purchased this one is great.  Good price, very easy to do and the taste so far is really good.  
I diverged from the instructions a tad.
I sprinkled the yeast on top of the must without making a starter and fermentation was up and running within 18 hours. 
From past experience I don't add the oak to the primary fermentation because it seems that the oak flavor gets washed out from fermentation.   I add the oak chips later during bulk aging using a small mesh bag to contain the chips and suspended by a string making it easy to remove the oak when the oak flavor is just right.

Great Wine
What a fun experience, the wine was so easy to make....just hope I have the patience to wait until it matures to taste it.  The smell is delicious!!!  I already ordered more.

Great Zin for the Price
Made this great wine according to the directions and added 4 oz of French Oak for 10 days. It already has a great body. What a great wine and hope to have some left after 1 year.  The process was easy and cleared nicely.  I'll buy another in a heartbeat,

I made this kit last year and came out great, purchased 2 more kits, now directions include potassium metabisulphite. I was assured before that it was not necessary. Why the change and what are the risks of not using it?
For long term storage (2 years plus) adding the potassium metabisulphite helps preserve the flavor and prevent browning.  It does not need to be added to wine that is consumed within a year or so.
