For Low-Gravity Beers Only

Review by Michael J. on 3/6/2006

Pros: This is a good one to use for low gravity ales where you want some softness, but still desire a relatively clean finish. I've used this for my English Milds (which I keg) and, believe it or not, it makes a really nice, crisp "American" style wheat beer.

Cons: This is not the most robust yeast in the world and is not high in either attenuation or flocculation. I tried making a dark brown ale with this once that was very dissapointing because it was just too sweet. For your medium and higher gravity beers, if you prefer to stick with the dry yeasts, I recommend the US-56 for American style ales and the S-04 for English styles.
