Just ok

I guess I am the minority that didn't care for this one. I am a big fan of Belgians so I thought I would try this. I had it set in my mind that this was going to be similar to a Abt12, Rochefort10, Etc but it just wasn't. The color was to light and the flavor was just not there. I think it being an all-extract kit removes the character of having grain involved in the process. Plus the spices were just overwhelming.

I have brewed this one many times and embellish on the recipe each time just to be creative. So far, they have all been good!

This is my favorite kit. It has a kick to it but is very drinkable when bottle conditioned for about 4 months. I add 1 cup Agave Nectar and lemongrass to the brew. I also add tequila soaked vanilla beans to the first stage of fermentation. YUM!!!

This one took a long time to be great

And I mean a long time. It took 12 months to go from good to great. Now, 15 months later it is a really great brew. Be patient. Put it away and pull it out next year. You'll be happy you did.

I am a relatively new brewer having done 15 kits over the last 18 months. While I have drank a lot of different styles of beer over the years - both here and in Europe- Belgian beers in general are not among my favorites. That being said, this beer is. I give it a rank of 8 out of 10 in my own ranking system. It is strong and fruity. I aged it 6 months before drinking it regularly. Still have four pints left, so I'll be ordering another kit soon. It will be the first kit I liked so well that I wanted to order again instead of trying something new. OG = 1.10, FG = 1.028.
