Excellent Zinfandel

This is my third Williams kit and it is by far the best I have made. It is still in clearing stages but the flavors are outstanding and will only improve with age. One caution for the kit winemakers out there. None of the Williams kits come with post fermentation sulfites. I followed the directions on the first 2 kits to the letter and they have shown considerable oxidation after bottling - not a good thing in my book. In fact, I may lose most of the wine due to off taste. I take responsibility for this, but I just wanted to make you aware of the possibility. I have added 1/8 tsp metabisulfite to the zinfandel during clearing and will add another 1/8 tsp at bottling. So far (2 months into the process), the wine tastes cleaner and more vibrant than the previous attempts. I highly recommend adding sulfites to the wine during clearing. Williams Brewing, please consider adding post fermentation KMS to the kit (or at least recommend it in the instructions).

Just bottled this in June, and like William's Petite Sirah, I'm not going to be able to keep it around for the recommended 2-3 years, let alone 3 months. It is good right now! I've shared some with friends and family and have gotten good comments from all. I'll be starting another batch of this soon. Very easy to make compared to other kits.

Fruity with subtle chocolate and leather finish

A great wine overall. Supplemented with an extra 46oz of zin concentrate to to make 6 gallons and give fuller body. Chocolate and black cherry very noticeable after just 2 months aging over heavy toast American oak cubes. Many people have complimented saying this rivals many commercial Old Vine Zins from the Lodi area. Really going to have a hard time refraining from drinking the entire batch but that's why a second batch is soon to be in the making!! PROS: Easy to make and great varietal concentrate CONS: More new friends than bottles of wine to go around
