Great Pinot Noir

At 1-1/2 years this was very good wine. Easy to make and very satisfying at a reasonable price.

Pros: This is the best under $3 bottle of wine you can get. It's easy to find a good bottle of wine for $20, but this one will only cost you $3 and taste like a $20 bottle. I love the cab too, but this is my year round favorite.

Cons: I can't think of a one, except that I recommend starting with 2 kits, wait for a year to start drinking, and by the time you start on the first bottle, have 2 more kits in the works. Because you really need to wait 12 months for the best quality, if you wait until you drink it all to start another batch, you have another dry year.

Pros: Was even somewhat drinkable after the initial primary fermentation. I will bottle this in two weeks, but its looking and smelling good so far. Easy to make.

Cons: Instructions are not great. I wish there was just a bit more detail or suggestions. Had to add a second packet of yeast to get it started as the instructions said to add the yeast to the cold water/concentrate mix. Hint: the yeast mixture needs to be at a similar temperature to the concentrate mix. Keep it on the warm side for a good start. I used a brew belt and got a vigorous ferment!

My best batch ever!

Pros: I make quite a bit of wine from kits, both Williams brand and others. This kit which I brewed 2 years ago produced the best batch of wine I ever made. I am down to my last bottle, sob!

Cons: I have tried this kit twice more but have been unable to duplicate that batch though the results were still good. Quite a bit of crystalline sediment in spite of adding fines to the secondary fermeter and an extra racking.
