Description

Making your own wine is satisfying and easy.  As long as you ferment great juice, keep everything sanitary, and give it enough time to age (3 months or more for whites, 6 months or more for reds), you will get great wine.

Here at William’s, we have developed our William’s California Wine Kits with this philosophy in mind. Our Kits include 192 ounces of pure California varietal grape concentrate, condensed at temperatures that never exceed 180 degrees F. from Central Valley wine grapes picked at their ripe peak in the late Summer and early Fall. To complement the varietal juice, specially selected dry wine yeast, oak chips, and nutrient are also included as needed. Unlike many wine kits featuring added sugar, this 192 ounces of pure concentrate is all that is needed (except for the yeast and addtives) to produce 5 gallons (24 bottles) of varietal wine.

Note: This kit must be refrigerated upon arrival. Shelf life is 4 weeks if kept refrigerated.

Petite Sirah is named after its small grape size, not the size of the finished wine. This is a big, tannin-loaded dry red that is best aged a year or more. Overtones of black pepper, blackberry, and licorice can be detected in the finish. A wine that can age for several years and continually improve.

Good so far
This batch is still fermenting, but the initial steps have been pretty easy. The waiting period is tough when you are curious about flavor. I would recommend this product from the early stages of the steps to make it.

so far, so good
I just bottled this one after 4 months. Really strong at this young age and looking forward to aging and trying over time. I've started Pinot and Viognier kits from Williams, and so far so good on those as well. Really impressed with Williams kits compared to all the other mainstream brands i've been using over the years.

Very Potent Juice
I just started this batch so I can't comment on the taste yet. However, compared to other kits in this price range I'm blown away. I had to add an additional .75G of water to get the S.G. where I wanted it (~13% ABV potential, was closer to 15% when mixed per the recipe). Most other kits in this price range are labeled as 6 gallon kits and only produce a 9% ABV wine with a "medium body".

From the taste of the juice I'm confident this wine will be excellent after 6-9 months. If not I'll be back with a fresh review.

Petite Sirah
I made this wine in early Aug of 2012. I just bottled it the 3rd week of July 2013. This is a good solid wine that I would not hesitate to drink and share with others. I can't rate it a 5 right now because I don't detect enough complexity. However in another 6 to 12 months it may be there.

Petite Sirah Kit
I bottled this wine 11/20/2012 and can't keep away from it! So much for waiting the recommended 3 months! It has become my new favorite. Will be difficult to keep a bottle for 2-3 years Very easy to make and I got a yield of 2 cases for a price of $2.91 per bottle (including shipping!) I'm not a wine snob, just a wine drinker, but this is better than some I've bought for $35-$50 a bottle. Good Job!
