Italian Licorice added to Williams Porter
I've found that one ounce of the L.D. Carlson "Licorice Stick" imparts a subtle yet distinct flavor to Williams Porter.  Licorice is usually made from a mixture of wheat, molasses, and licorice extract.  The extract derives from the sweet-tasting root of a leguminous plant of Europe and Asia.  A product of Italy, the L.D.Carlson candied licorice comes in a hard 5" stick weighing about an ounce.  Not to be confused with the gooey stuff we ate as kids, this dense product requires crushing into small pieces before adding to the brew pot.  Otherwise, it won't dissolve properly.  I place the amount I want to use (up to one stick) in a plastic sandwich bag and crush it with a hammer or in a vice.  I add the crushed licorice to the brew pot at the beginning of the boil.  I've found also that anise (seeds) complement the licorice flavor quite well. I've made at least a dozen 5 gallon batches of Williams Porter using this licorice. It has never failed to please.
