Winemaking is a deceptively simple process; just mix your varietal grape juice with yeast, and let it ferment for four months before bottling. Unlike brewing, which requires you to boil malt with hops to create fermentable wort, winemaking does not require a boiling pot, forced cooling, or delicate liquid yeast cultures to produce great wine. Great wine does require good quality varietal grape juice, undiluted by added sugar or generic concentrate, and it also needs extended aging periods of 3 to 6 months for whites, and 6 months or more for reds.
Our Home Winery includes everything you need to make wine making easy and satisfying. The Siphonless Fermenter with invert tube transfer valve makes it easy to complete the initial 25 day stage of fermentation, and the unbreakable PET carboy with airlock and valve makes the following secondary fermentation easy.
Other supplies include Brewer’s Edge® Cleanser, for cleaning your fermenters and bottles, stirring spoon, a precision hydrometer (needed to know when your wine has finished fermenting and is safe to bottle), hydrometer jar, 4 feet of transfer tubing and a siphon, and all needed airlocks and stoppers.
Which William’s California Wine Kit to choose? If you like reds and want something that is ready to drink in 6 months or less, pick the rich Petite Sirah or for a lighter red, Pinot or Merlot. For whites, Riesling can be quite good after only 3 months in the bottle, and Viognier has a smooth fruitiness that develops quickly with touches of pear and apricot in the finish. Our whites tend to be a bit sweeter, fuller in body, and slightly darker in color than many commercial white wines, due to the warm climate of Lodi where the grapes are grown.
Wine bottles are not included - you will need fifteen 750ml wine bottles per batch. If you are a wine drinker, just clean and reuse 750ml bottles.
Making your own wine is satisfying and easy. As long as you ferment great juice, keep everything clean, and give it enough time to age, you will get great wine. Another benefit is the cost savings; the cost of our William’s California Wine Kits works out to under $3.50 per bottle.

Nice package
I got this and am pleased with the quality of all the items. The corker is first rate, and very easy to use. The only problem is I have to wait a few months for the wine to mature!
Amazing customer service
This is a great kit for people starting out making their own wine, good quality kits that include more than most others offered from other places. When I had a defect in one of my small parts, the amazing customer service from William's blew me away. They really went above and beyond by sending me the new part overnight so I didn't lose any time with the brewing process!!
Good ingredients
The quality of the juice is quite good. I rate it 4star. The instructions are better than most. Follow them and you will be producing some very drinkable wine that will surprise your wine snob friends and impress everyone else when you tell them you made this from a kit. It is the siphonless fermenter bucket that brings this review down to Average. You must have the seal Just Right! A little too tight or a little too loose and you will have a leak. In 4 attempts at using it, I have only managed to get it "Just Right" one time. In order to promote and insure domestic tranquility, be sure to check the seal for leaks with some water (filled completely full) before using it and it should be OK. It is just kind of annoying to have to do this extra step every time. Fail to do this and there is an excellent probability that you will be hearing from your Significant Other that "Your $#@*&! stuff is leaking all over the counter AGAIN! Response from William's: Sounds like a defective Siphonless Fermenter, please contact us at 800-759-6025 or service@williamsbrewing.com and we will take care of this.
Switching from beer
So, I've been brewing beer with Williams' ingredients for 20 years, and decided it's time to make some wine. It's very difficult to find concentrate recipes without sugar, but as usual Williams stepped up to the plate. Very easy to make; much easier than beer. Substituted Petite Syrah for Merlot and added 1 can of frozen grocery store concentrate with a quart of extra water for a little more body and sweetness. Check back in 9 months!
Great Wine Making Kit, Great Value
I got one of these kits for Christmas, 2012 and it is a great kit. I found the instructions succinct and exactly what is needed for a beginning home wine maker. The quality of the items provided was great. I am on my third batch of wine right now and couldn't be happier. I am a new but loyal Williams Brewing customer. If you want to make your own wine, this is the ONLY way to go!
