Belle Saison is an ale yeast of Belgian origin selected for its ability to produce great Saison-style beer. This is the first dried Saison yeast for home brewers.

 Quick start and vigorous fermentation, which can be completed in 5 days above 17°C (63°F).  Fermentation rate, fermentation time and degree of attenuation depend on inoculation density, yeast handling, fermentation temperature and nutritional quality of wort. Low flocculation rate; settling can be promoted by cooling and by using fining agents and isinglass. Saison beers are quite unique to brew. During fermentation, cooling is not normally used, allowing temperature of fermentation to increase.   Aroma is fruity, spicy and peppery due to ester and phenol production, and does not display undesirable odours when properly handled.

Recommending Belle Saison

The warranty pack is no match for an afternoon in the mailbox at 90 degrees. So ordering liquid yeast (Belgian Saison or otherwise) in summer months has become impracticle. I switched to the Belle Saison dry yeast with an ice pack. I use it with the Williams Belgian LME and get great Saison style results. Brewed several batches last fall '13 and have been aging them in garage this Winter. They just keep getting better and better.

Hints of Saison

Great performer; 1.004 in 3 days from 1.060, but the flavor was more like a Dubel, but had hints of sour fruit. I have used this to finish the persnickety wy3724 to good effect.

Very Vital Yeast

Surprising how quickly this yeast acted. I made a starter that showed signs of activity within an hour. Pitched into a 5 gallon batch it was ready for re-racking in little over a week. I poured three gallons of cider over the dregs which also took off almost immediately. Finishing is taking a bit longer than expected after the initial jumpstart but it has been cool in my brew room and both the beer and cider were chock full of fermentable sugars - we will see how it deals with higher ABV
