From White Labs of San Diego, this strain provides a low intensity Brett character, fruity, pineapple like aroma, and is used primarily to add aroma to Belgian styles. This strain is closely related to B. anomalus.


Yeast Starter Required

These are live cultures. Although the White Labs tube says you can pitch this directly into your wort without a starter, this is not a good ideal for yeast that has shipped through the mail (unless you pay for ice packs and two day air or Priority Mail shipping). We sell these live cultures with the understanding that it is your responsibility to proof the culture on arrival by making a yeast starter. Default Brett strain

My go-to Brett culture for Saisons and anything you want a little fruity funk in. I always get good freshness dates when ordering this from Williams as well.

100% Brett Beer

I used this for a 100% Brett IPA. I used 2 vials in a starter, it fermented at about the same pace as a regular ale yeast. It is giving off an awesome pineapple aroma, which is why I chose this strain. Flavor is terrific as well, nice and fruity, not too much funk (we pitched a very healthy amount of yeast). I do recommend cold crashing or clarifying in some way if you go 100% brett using this strain, flocculation was very poor.
