Unlike the cold of Winter which tends to increase one's appreciation of strong, full-flavored beers, the heat of Summer is more conducive to a refreshing beer with a lower alcohol content. With this in mind, we have developed William's Watermelon Ale, a wheat beer accented with a touch of natural watermelon flavor. This is a light wheat beer (alcohol about 3.8%) with a touch (a slight hint) of natural watermelon flavor added just before bottling. Ideal for Summer drinking, especially if served in a tall glass and garnished with a slice of watermelon. Alcohol: 3.8%, IBU's 25.
Includes 6 pounds of our blended wheat malt extract (60% wheat and 40% pale malt), flavoring hops, natural watermelon flavoring, liquid wheat yeast, and corn sugar for carbonation. Makes 5 gallons with a starting gravity of at least 1.042. Ease of brewing: Beginner

Spectacular Beer
Pros: I had talked to some of friends that have drank some of my home brew and mentioned watermelon ale and they thought it would be great. I was not so sure until I brewed and man oh man were they right. It is spectacular will brew more of this one.

Let it sit for a few extra weeks!
Pros: Easy to brew. After sitting for an extra month or so, this beer was drinkable. With time, the watermelon flavoring gets milder - either that or I just got use to it.
. I brewed this one in the same period as the Apricot ale and, for me, the Apricot was the better summer brew.
Cons: Initially this beer was pretty harsh. Had a very strong, fake watermelon flavor that was overwhelming. I dressed it up with the watermelon garnish at a cook out - everyone enjoyed the garnish, but the review on the beer ranging from “good” to
