Description

An extract made with 60% German White Wheat and 40% German Moravian two-row barley. This malt extract, based on the malt base of the wheat beers of Bavarian, is ideal for brewing authentic German wheat beer. Like all our extracts, our German Weizenmalt is condensed at low temperatures, to retain the soft flavor and golden color only wheat malt can provide.

Approximate SRM color value of 6 pounds of extract dissolved into 5 gallons of water before boiling: 6

Great Base Malt
I brewed a Hefe with this malt using Zainasheff's Hefeweizen recipe in Brewing Classic Styles and it turned out great. My fermentation temp was a little high (~67 F), but I'm pleased with the final product. I didn't have any problems hitting my target FG.

Best Hefeweizen Yet
I'm a huge hefeweizen fan and have now tried brewing several different batches using extracts, partial, and all-grain methods. For my most recent batch I went very simple, I used this 8lbs of extract plus 1.75oz of German noble hops and WYEAST 3068 and it was hands down the best hefe I've made to date. So good, my wife and I kept this brew to ourselves! Definitely plan to use this extract again!

1 oz. Columbus (60 m)
1 oz. Palisade (15 m)
1 oz. Cluster (10 m)
S-23 Lager Yeast (harvested)

You can make a fine Kristallweizen with this
I used this malt to make two batches of Kristallweizen, a clear, Pilsener-like wheat beer of Bavaria
http://www.germanbeerinstitute.com/Kristallweizen.html
I also used Wyeast 3056 Bavarian wheat yeast and some Pilsener-style hops. It turned out very clear, beautiful golden, with a subtle and excellent flavor. (A little fining helps clear it even more.) There is nothing better on hot days. With 6 lbs. malt the beer was very subtle (probably more authentically German); with 8 lbs. a little bolder and more to American taste.
