Why rye? Like bread made from rye, beer made from malted rye has a spicy, earthy and dry character.  Like in bread, rye adds an aggressive flavor to beer, which we have accented with a full IPA hop load.  William’s Rye IPA is strong in flavor, with the dry spicy rye working with the citrus and pine character of the hops.  This is a bracing beer, perhaps best served with a side of ice water. Alcohol: 8.0%, IBU’s 70.

Includes 10 pounds of blended rye malt extract (containing 15% rye malt) and beet sugar, 3 flavoring hop additions, 125ml of liquid ale yeast, and carbonation sugar. Makes 5 gallons with a starting gravity of at least 1.072. Ease of brewing: Beginner.

This is a photo of our American IPA after it had been in the bottle for 2 weeks. Note that it is a bit cloudy; rye beers tend to be more cloudy and take longer to clear.

Good beer, but needs tweaking
This was a good beer. I would probably change the hop profile slightly. Unfortunately, these kits don't come with an ingredient list so tweaking is impossible. I'd recommend skipping the kits and use their LME products in conjunction with one of the many online beer recipe sites. 

If you just want a good beer, then this is a good kit. If you want to learn and grow as a homebrewer, steer clear.

the rye really stands out.  not as hoppy as i would have liked, however.  not sure why it has to be consumed in 7-9 days after bottling as outlined in instructions.

William's Responds: Generally, IPA's are best consumed fresh, which is why this is in our instructions. Our Double Rye IPA also ages nicely over a couple months, particularly if stored refrigerated.

Double Rye IPA
More robust than the American IPA but still has a god strong hop taste. It is worth trying.
