This product from Five Star Chemicals will stabilize your mash water and lock in a pH of 5.2 regardless of your brewing water. A proprietary blend of food-grade phosphate buffers, adding one tablespoon of pH Stabilizer per 5 gallons of strike water will ensure a starting pH of 5.2, optimizing the enzymatic activity of your wort. This 4 oz. jar will treat over 12 five gallon batches.

Great product!
Pros: This is a must for all grain brewing.  Does not impart any flavor or color and dissolves well when you add it to your mash water prior to adding your grain at dough in temp.  Well help with all water types for good conversion. 

Cons: Not really a con but this product is not needed if you brew extract only.

Mash-in and forget about it!
Pros: I've never bothered with pH testing as long as I have this on hand.  Just pitch a tbsp. in the mash and a tbsp. in my sparge H20 and you're good to go.  So easy...

What is the max ration you should use of mash liquor to pH5.2 stabilizer without impacting beer quality?
Use at a rate of 1 tablespoon per 5 gallons, or 2oz. per 31 gallons for larger brews.  Exceeding this amount may impact beer quality.
