Centennial is a balanced high alpha acid hop sometimes thought of as a super Cascade. Some craft brewers think of this one as a clean and refined version of Cascade. Great in ales, IPA styles, and even in wheat beers. Average alpha acid: 9%

My Fallback Hops
I use a lot of different hops and most ale batches are unique. Centennial is one of my standard hops to use as it provides a good aroma and my tastes range to the higher AA strains of hops. I have used it in light, med and dark beers and I like it in all. My favorite is a lemon summer ale that I do make quite often. To give it a strong hops kick, I use Centennial as a dry hop at the end generally at a 0.4 - 0.6 ounce per gallon rate. It gives a nice strong hop flavor that never grows old.

The one and only
The absolute perfect american IPA hop. Even when it mellows with age, it's distinct character shines through on the palate

great for ipa
Pros: If I had to choose one domestic hop variety this would be it. Been happy with the freshness from Williams. Centennial's a great dual purpose hop. You can make a great IPA with it alone...Bell's does.

Cons: hop shortage/price
