A proprietary blend of food-grade phosphate buffers, adding one tablespoon of pH Stabilizer per 5 gallons of strike water will ensure a starting pH of 5.2, optimizing the enzymatic activity of your wort. Stabilize at 5.2?
I've been using this product for many years with satisfactory results. It seems to handle temporary hardness well. But, if your water has a high permanent hardness (as it does this year after 4 years of drought) it is ineffective and my mash pH will drop to the pH of the malt (on the malt batch analysis) or only by point one degrees. To bring down the pH I've tried CaCl2, Lactic acid, and combinations of filtered tap, RO, and De-ionized water as well as the pH5.2 stabilizer. e.g., permanent hardness. [Feb. 21, 2017]

Great
Pros: This product is great for using during the mash.  I have hard water but this tends to regulate it well so that I still get good efficiency and I have not had any issues with tannins either 

Cons: Directs are a bit unclear as to how much to use, but I use 1 tablespoon per 5 gallon batch in the mash
