Spelt is a distant genetic relative to wheat, and imparts a dry, tart, and earthy character and aroma. Use up to 40% in the mash. This German-grown malt is Ideal for Saison and Belgian wheat styles. Crushed so you can just add it to the mash without milling.

So far so good!
I just used this as >35% of my grist for a saison. It was my first time using spelt... so as a precaution to prevent things from getting stuck, I did a mash-out to lower viscosity and also used some rice hulls. Things went pretty smoothly and the wort smelled and tasted GREAT! I can't wait for the finished product and I plan on getting more malted spelt soon!

Readers of "Farmhouse Ales" and devotees of Franco-Belgian beers will find this an essential ingredient for making authentic Grisettes and Saisons.  There is a bready nuttiness that no other wheat-related grain can produce.  Use it in place of wheat in any Saison/Biere de Garde recipe and reap the rewards.

Sweet and Nutty relative to wheat
I have been using spelt as an adjunct to several recipes including IPAs and Sahti.  It has a slightly sweet and nutty flavor.  Try it in addition to or instead of rye. I think it would be a great adjunct for wheat beers - especially Wits.
