PINOT NOIR CONCENTRATE Description

William's California Wine Concentrates are made from 100% Central Valley varietal wine grapes, picked at their peak and gently concentrated with minimum heat (never exceeding 180 degrees F.) under vacuum to 68 Brix. Sugar has not been added, nor is sugar needed to make 5 gallons of full-bodied varietal wine.

The 192 ounces of concentrate included in each pack (two 96 oz. cans) is enough to make 5 gallons of wine with an alcohol content of 12 to 13%. Contains sulfiltes, so you do not need to add them before fermentation. Our California Wine Concentrates are also acid balanced, so you do not need to add acid or do an acid titration test (unless you want to).

Pinot Noir is a grape that yields a full-flavored, complex red wine. Matures in one to two years, with a softer, sometimes fruitier character than Cabernet.

Pros:  I completed a batch using this concentrate in late Spring 2008. The wine has superb taste and character, the appearance is crystal clear and vibrant red. There was no harsh taste prior to bottling, which is quite uncommon for young Pinot Noir. I would recommend this concentrate over any kit on the market. If you use bentonite, pectin enzyme, wine tannin and fining agents in your winemaking practices, you can bottle this wine in 6-7 weeks and have a great tasting wine in 2-3 months aging time. Additionally, William's Brewing has excellent customer service, who will answer the most complex questions, if you are a meticulous winemaker such as I.
