Mexican beer is extremely popular in the United States, probably due to its refreshing lightness and image of a more relaxing lifestyle. Although light beer has its place, we have always felt that some of the most interesting beers are those that push the limits in terms of flavor and strength, yet still retain the vital balance between the sweetness of the malt, bitterness of the hops, and the heat of the alcohol. Guillermo's Imperial Pilsner, with rich flavors of German malt, American corn, European hops, and a touch of alcoholic authority, is our version of what a serious Mexican beer should be. An ideal early evening beer, to be slowly consumed after the workday is done. Alcohol: 7.9%, IBU's 40
Includes 11 pounds of our blended malt extract mashed from German Moravian barley and American flaked corn, 4 flavoring and aromatic hop additions of European hops, liquid lager yeast, and corn sugar for carbonation. Makes 5 gallons with a starting gravity of at least 1.075. This kit requires a secondary fermenter, and should be brewed at temperatures of 60° to 72° F for best results. I've brewed now about a half-doz different William's kits and they've turned out pretty well and mostly very well. This kit, however, turned out to be just super! I held a Febtoberfest last weekend with 30 of my friends to sample my brews and while the William's German Ale, Stout, and Kolsch all scored very well, this one was the overwhelming favorite.

I didn't get either quite as high of an OG nor quite as low of an FG as listed, and I had to make room in my fridge to lager this for a month -- but it was worth it!
