ASCORBIC ACID Description
An antioxidant (vitamin C) used both as a preservative and as a way to lower wort pH. Use very sparingly when lowering wort pH, as too much ascorbic acid will lend a citrus flavor to the finished beer. Use 1/2 teaspoon per 5 gallons to protect aging beer from oxidation.
