2112 CALIFORNIA LAGER Description
Well suited for producing 19th century West Coast beers. Retains lager characteristics at temperatures up to 65° F. High flocculation, attenuation: 67-71%. Ideal temperature range: 58-68°F. This small 50 ml self-starting pack is not large enough to make a starter for 5 gallons. We strongly recommend you make a yeast starter when using 50 ml yeast sizes.

Pros:
This is a fairly robust yeast that has the strength to complete fermentation in even high-gravity worts. It doesn't leave spice or fruit esters like ale yeast. "Bread" is the flavor that remains.
Cons:
This yeast throws off phenolics like crazy when fermented at too-high temperature. 62 degrees Fahrenheit is about is limit. Above that and your beer will taste like medicine. Even at 62, you will detect slight phenolics that dissipate with aging.
